How it works

  1. Preheat the oven to 180 °C. Butter the tin and line the base with baking paper.
  2. Separate the eggs. Beat the yolks with the sugar until pale and creamy, then stir in the almonds, the grated lemon zest and a pinch of cinnamon.
  3. Whisk the whites until stiff and fold them in gently. That's the whole secret – there's no flour in this.
  4. Spread into the tin and bake for 30 minutes, until golden on top and a skewer comes out clean.
  5. Leave to cool for 10 minutes, release from the tin, dust with icing sugar.
  6. Peel the oranges and slice them. Serve the gató warm in pieces, oranges alongside, a scoop of almond ice cream on top.

For children

Let the kids whisk the egg whites. The classic test: turn the bowl upside down – if nothing slides out, it's stiff. Whose head you hold it over is up to you.

Leftovers for tomorrow

Leftover gató keeps covered for two days. Have it for breakfast with yogurt and oranges – or simply with coffee.
