How it works

  1. Fill large glasses to the brim with ice. Really to the brim – lots of ice melts more slowly.
  2. 5 cl of gin over it.
  3. Pour the tonic slowly down the handle of a spoon so it keeps its fizz.
  4. Add a slice of lime and a sprig of rosemary, stir gently once.
  5. Out to the terrace, facing west. The rest takes care of itself.
